I suggest using one class, ie GT1, GT2 or GTC. Having split the whole grid in 2 or 3 classes for 2 hours could get very seperated.
It can get quite lonely with a single class because there's very little lapping going on. Last time we did this we had free choice and a good mix of GT1 and GT2/GTC cars which worked quite well. Faster drivers in GT2 and slower in GTC (they seem shake out that way anyway given a free choice) might work too.

GT1, GT2, & GTC would be good as long as there is an equal spead of drivers across all classes - 8/9 in each one?
