looking for an F1 sim, not to concerned about the year, with a nice in-depth career mode, where you work your way through the seasons and are offered drive seats (or lose seats) based on your season's performance.

I've looked at F1 challenge and Grand Prix 4, and neither seem to offer this (and I'm pretty certain all the F1 mods are simply "Pick and drive" type racers)
